This Leche Flan with Cream cheese is creamy, smooth, and easy to make with caramelized sugar on top to give it a soft glassy look. Steam it in the instant pot, or regular steamer.
In my previous Leche Flan post, I cooked them by steaming; this time around, I baked them with a water bath to prevent cracking on top and make them smooth and creamy.
Before, I used egg yolks, but now I am using whole eggs and added cream cheese.
So for those of you who have cream cheese sitting in the fridge, you can make this sweet Filipino dessert.
What is Leche Flan?
Leche Flan is a custard-like Filipino dessert with egg as the main ingredient. I used condensed milk to sweeten it. The top is glazed with caramelized sugar, giving it a smooth and golden-look flavor.
How does it taste?
It’s sweet and creamy and melts in the mouth, served on special occasions like holidays; this dessert is perfect any time of the year and will always please the crowd. Enjoy it.
Ingredients
- 4 oz cream cheese
- Six eggs
- One can of 14 oz condensed milk
- 300 ml water
- One teaspoon of vanilla extract
How to make Cream Cheese Leche Flan
Caramelize the sugar: Place 1 cup of sugar in the 8 inches round cake pan and melt the sugar on low heat. Swirl the pan until the sugar is liquefied, which is about 10 to 15 minutes. Let cool and set aside.
Prepare the Leche Flan: Place 4 oz cream cheese, 14 fl oz condensed milk, one teaspoon vanilla extract,300 ml water, six eggs in the blender. Blend the ingredients until smooth. Pour into the prepared pan with caramelized sugar and cover with tin foil.
Prepare the water bath:
- You need a bigger pan than the round pan you are using. You can use roasting, saute’ or frying pans.
- Place the round pan in the middle and fill the pan with hot water.
- Transfer the pan to the oven and bake for 90 minutes.
- Let cool and put a plate on top and flip the pan to release the flan.
How to make it in the Instant Pot?
Follow the instructions, but the difference is you steam it in your Instant Pot Duo Crisp and you’ll be using a six-inch pan.
- Place 1/2 cup of sugar in the 6-inch round cake pan and melt the sugar on low heat. Swirl the pan until the sugar is liquefied, which is about 10 to 15 minutes. Let cool and set aside.
- Place the inner pot inside the base. Add three cups of water and put the air fryer basket inside.
- Divide the Leche Flan mixture into two six-inch round pans. Cover the pan with tin foil.
- Put the pan on the air fryer tray and then put the dehydrating tray on top. Then set the second pan on top of the tray. Cover with the pressure cooker lid and push the steam function button. Set the timer to twenty-seven minutes. Quick release and take the pan out.
- Let the Flan cool down and refrigerate overnight before releasing it from the pan.
What mold size
You can use llanera (pronounced as yuh-neh-ruh), an oblong-shaped pan similar to this pan I used here.
You can also use a cake pan. Use an 8-inch pan for the amount of the ingredients I used in this post. It just had the right amount of thickness/
Tips to achieve a smooth and creamy flan.
Blend: Put all of the ingredients in the blender and blend until the mixture is smooth.
Strain: To prevent significant residues, sift through the mixture using a filter to avoid extensive residues when transferring it to the mold.
Water bath: Since the water bath adds moist heat to the oven, it will make the Leche flan soft and moist.
How to Store
Fridge:
- When the flan is ready and fully baked in 90 minutes, let it sit at room temperature until cold.
- Scrape the sides of the pan using a knife to release the flan. Place a plate on top of the pan and flip to release.
- Place the Leche Flan in the fridge, cover it, and store it for one week.
Freeze: You can freeze it too. Just keep it in the mold and cover it with foil, and freeze. When ready to consume, let it sit in the fridge to thaw.

- Place 1/4 cup of sugar in two six-inch round cake pans and melt the sugar on low heat. Swirl the pan until the sugar is liquefied, which is about 10 to 15 minutes. Let cool and set aside.Divide the Leche Flan into two six-inch round pans. Cover the pan with tin foil.
- Place the inner pot inside the base. Put the air fryer tray inside.
- Add two cups of water to the inner pot. Put the pan on the air fryer basket and then put the dehydrating tray on top. Then set the second pan on top of it.
- Cover with the pressure cooker lid and push the steam function and set the timer to twenty-seven minutes. Quick release and take the pan out. Let the Flan cool down and refrigerate overnight before releasing it from the pan.
How to Release the Flan After Steaming
- After the flan is cooked, let it cool first, and refrigerate overnight.
- When ready, scrape the side using a knife and put a plate on top and flip the pan. Please see the video.
